Papa Rellena – Stuffed Mashed Potato Balls

Stuffed Mashed Potato Balls, Papas Rellenas in Spanish, are basically portable meat and potatoes. These Cuban appetizers can be a little labor intensive but they can be made ahead of time and refrigerated for several days or frozen for up to 3 weeks. Papas Rellenas are great to have on hand for parties and get togethers. Everyone loves them! Continue reading

10 Questions with “Miami’s Hottest Chef” Ana Quincoces

Ana Quincoces Rodríguez grew up in a Cuban household in Miami, Fla., where she was routinely conscripted to help her mother in the kitchen, which led to her passion for the art of cooking. Like many young Cuban girls, Ana was given a Cuban cookbook as a gift by her mother. While she cooked from the book regularly, she always found it difficult and not very user friendly. As the time approached for Ana to teach her own daughters the way around a Cuban kitchen, she attempted in vain to find another authentic Cuban cookbook; Continue reading

On Social Media and Soufflés…

I am the first to admit that I am beyond computer illiterate. In fact, I just got an iPad as a birthday gift (I know, nice right?) .and I held it helplessly in my hands asking my family what it was. In 2011 I resolve to……

Being a classic Type A overachiever, resolutions always seemed pretty silly to me. I am always trying to do better, to do more, to improve myself in some way (often unsuccessfully, I might add). I get wrapped up in what … Continue reading

Reflecting on the Holiday Season

Reflecting on the Holiday Season I intended to write a blog about Christmas BEFORE Christmas but alas, I ran out of time. What is it about the holidays that makes them both magical and stressful. Why is it that … Continue reading

Spring Cleaning

Its spring cleaning time and I’m not talking closets and drawers. This year I’m cleaning up my diet! I haven’t decided which diet I will embark on next but I’m definitely going to clean up my act with a juice fast first. I’m sort of a WebMD junkie. I click on body parts that seem relevant and that have ached at one time or another, however briefly. I end up with several different possibilities, most of them dealing with stomach disorders.
