Stuffed Mashed Potato Balls, Papas Rellenas in Spanish, are basically portable meat and potatoes. These Cuban appetizers can be a little labor intensive but they can be made ahead of time and refrigerated for several days or frozen for up to 3 weeks. Papas Rellenas are great to have on hand for parties and get togethers. Everyone loves them! Continue reading
Ana Quincoces Rodríguez grew up in a Cuban household in Miami, Fla., where she was routinely conscripted to help her mother in the kitchen, which led to her passion for the art of cooking. Its spring cleaning time and I’m not talking closets and drawers. This year I’m cleaning up my diet! I haven’t decided which diet I will embark on next but I’m definitely going to clean up my act with a juice fast first. I’m sort of a WebMD junkie. I click on body parts that seem relevant and that have ached at one time or another, however briefly. I end up with several different possibilities, most of them dealing with stomach disorders.
